I know what you're thinking. "Did he fire six shots or only five?" Well, to tell you the truth, in all this excitement I kind of lost
track myself. But being as this is a .44 Magnum, the most powerful
handgun in the world, and would blow your head clean off, you've got to
ask yourself one question: Do I feel lucky? Well, do ya, punk?
(Dirty Harry)

That's no moon. It's a space station. (Star Wars)

Space: the final frontier. These are the continuing voyages of the starship Enterprise. Her ongoing mission: to explore strange new
worlds, to seek out new life forms and new civilizations, to boldly go
where no man has gone before.
(Star Trek II)

For the good old American lifestyle: For the money, for the glory, and for the fun... mostly for the money. (Smokey & The Bandit)

If I'm not back in five minutes... just wait longer.
(Ace Ventura)

I don't see many movies either, especially new movies but here are a few off the top of my head. What they were doing there I don't know...

Clint Eastwood from the Outlaw Josie Wales:

"Are you going to pull them pistols or whistle Dixie?"

Paco from The Good, Bad and the Ugly:

"When you have to shoot, SHOOT! Don't talk!"

    John Wayne from "Big Jake":

"Now YOU listen to me...Anything goes wrong, my fault, your fault, nobody's fault, it doesn't matter. I'm going to blow your head off. No matter what else goes wrong, no matter who else gets killed, I'm going to blow your head off." Said with a coach gun in his hand...

I always enjoyed the gore-rich Evil Dead movies by Sam Raimi. This included Army of Darkness, and my personal favorite Evil Dead 2. Bruce Campbell achieved cult-status with lines like these from A of D:

"First you wanna kill me, then you wannna kiss me."
"Don't touch that please, your primitive intellect wouldn't understand alloys and compositions and things with... molecular structures."
"Well, hello Mr. Fancypants. Well I've got news for you pal, you ain't leading but two things right now: Jack and S--t... and Jack left town."
"Gimme some sugar baby." (just in time for Valentine's Day)
"Good. Bad. I'm the guy with the gun." (after shooting his evil half)

        Now here's my favorite ;)

Dr. Frederick Frankenstein: [to Igor] Now that brain that you gave me. Was it Hans Delbruck's?
        Igor: [pause, then] No.
Dr. Frederick Frankenstein: Ah! Very good. Would you mind telling me whose brain I DID put in?
Igor: Then you won't be angry?
Dr. Frederick Frankenstein: I will NOT be angry.
        Igor: Abby Someone.
Dr. Frederick Frankenstein: [pause, then] Abby Someone. Abby who?
        Igor: Abby Normal.
Dr. Frederick Frankenstein: [pause, then] Abby Normal?
Igor: I'm almost sure that was the name.

Young Frankenstein is one of my favorite movies.... I'm a serious Mel Brooks fiend... even one of my screen names on other programs is Abby Norml (spelled without the a in Normal... for ummm... other reasons ;)
